A derivative of the Persian word pilaou, which means boiled rice, pilaf in the modern context indicates a method that involves cooking the rice in fat (nacrer) before adding the liquid element (usually stock). Pilaf can be flavored with onion and bouquet garni, but has a whole host of variations. This includes the much loved paella, which is garnished with chicken, vegetables, and shellfish.
