The almond powder in crème d’amandes serves the dual function of being a thickener as well as a flavor agent. In a very similar recipe for crème d’amandes in the Mémorial Historique de la Pâtisserie, Lacam quips, “There are plenty of other recipes for crème d’amancles, I simply prefer the best.”

Method

  1. Cream the butter and sugar together until light and fluffy (crewer).
  2. Beat in the egg until well-combined.
  3. Using a small knife, split the vanilla bean in half lengthwise and scrape out the seeds. Whisk into the mixture.
  4. Add the rum and finish by mixing in the almond powder.
  5. Reserve the crème d’amandes in a covered bowl in the refrig
