Basmati rice is smaller than ordinary long-grain rice and has a delicious, nutty flavour, far superior to any other rice. Cooked in this way the rice is delicately aromatic and goes well with endless dishes. If you want to colour it yellow, add turmeric with the whole spices. If basmati rice is unobtainable use ordinary long-grain rice and cook for a little longer.
