I think these are quite delicious. The hard-boiled eggs are covered in a golden yellow sauce made with rich coconut milk, flavoured with onion and tomato and spiced with turmeric and chilli. They make a perfect supper or lunch dish, accompanied simply by a green vegetable such as broccoli and with Basmati Rice.
