These mildly spiced meatballs in a delicious, tangy yogurt sauce are easy to make and very popular. They are typical of Turkish and Middle Eastern cookery. Serve with rice and a firm vegetable such as beans, peas or carrots.

Method

Peel the garlic and chop finely. Put the minced meat in a bowl and add the garlic, spices and all but a little of the chopped mint or parsley. Mix well and season with plenty of salt and the cayenne pepper, and then mix in the whisked egg. Using wet hands, form into walnut-size balls.
