Wonderfully refreshing after a rich meal, this is an easy-to-make Chinese dessert. Almond Dreams are translucent white, softly jellied squares with a delicate flavour of almond. They look strange and beautiful in a bowl, topped with scented lychees under a glossy syrup. (If you dislike the flavour of almond omit the essence and add 1 tablespoon (15 ml spoon) strong rose water to the liquid before cooling.)
