In Japan you find restaurants which specialize in cooking only one thing, such as noodles, tofu, grilled chicken or even eel. To grill eel in the Japanese manner you will need sake, mirin and soy sauce, which in combination together form a teriyaki basting mix. The eel is also seasoned with aromatic sansho pepper.
