Every Christmas brings several bags of letters bewailing the remains of the turkey and asking for good new ideas about how to treat it. How moist your cold turkey is will determine the best way to treat it. If it is on the dry side, make a pie with the meat bathed in a rich and creamy velouté sauce infused with saffron.
There is no need to make a pastry case, instead just bake individual pieces of frozen puff pastry. Serve with mashed potatoes and some blanched winter greens.
