The tinned peas described as petits pois à la Francaise can be very good. Made properly, they are garden peas fresh from the pod but since the peas here are stewed for up to 20 minutes the tinned variety make rather a good substitute.

Add the spring onions and lettuce leaves. Turn to coat well, add the petits pois, sugar, some black pepper and put on the lid. Simmer gently for 10 minutes, or until the lettuce is cooked.
Stir in the remaining butter and serve.
