Tiramisu – literally, ‘pick-me-up’ – is one of the finest puddings ever to have emerged from Italy, a champion dessert and very simple to make. As with all essentially simple dishes, how delicious it is will depend on the quality of the ingredients. The coffee used should be espresso made fresh from high-roasted beans. If this is not possible, then use very strong coffee made in a cafetière. The Savoiardi sponge biscuits which form the base are very sweet, while the mascarpone cheese is so
