Steamed puddings have an honourable place in our food heritage, with dozens of variations that include honey, marmalade, chocolate, ginger, lemon and, of course, pouding aux raisins de Smyrne, better known to us all as spotted dick.
Despite their renewed popularity on restaurant menus, they rarely feature in today’s private entertaining. This is a pity because they are simple to prepare, can be made well in advance and give great pleasure.
