Sift each flour into a bowl with the yeast and salt. Pour the hand-warm water into the bowl of an electric mixer fitted with a dough hook. Add the honey and softened butter, then switch on at low speed. Pour in the flour mixture and work gently for 10 minutes, turning up to full speed and working for a further minute.
