Adding cheese always makes achieving a light result more difficult. The dough should be softer than for pastry, but this does not mean sticky The addition of some mustard in the mix will enhance the flavour. You can use self-raising flour, which already contains raising agents, but try the traditional method of adding bicarbonate of soda and cream of tartar to plain flour.
