Gubbins Sauce

Nathaniel Gubbins — aka Edward Spencer — concocted a spicy grill sauce dedicated to himself. It is very easy to make in a double boiler or in a bowl set over hot water, and is actually delicious. Grilled chicken wings make the ideal foil for Mr Gubbins tasty hot dressing. Perish the thought, but if you wanted to do something entertaining with a turkey leg then Gubbins sauce is also the very thing.


  • 60 g/ 2 oz butter
  • 1 tbsp freshly made Colman’s mustard
  • 1 tbsp tarragon vinegar
  • 4 tbsp double cream
  • 2 tsp chilli flakes
  • ½ tsp salt
  • 1 tsp freshly ground black pepper


In a bowl set over simmering water, melt the butter then stir in the mustard, tarragon vinegar, double cream, chilli flakes, salt and black pepper. Whisk until warmed through and amalgamated.

While your chicken wings are still very hot, pour Mr Gubbins’ sauce over them.
