This is particularly good with warm salads and has an affinity with duck, ham or barbecued pork. It also functions well as a marinade for chicken.


  • 2 tbsp clear runny honey
  • 5 tbsp extra-virgin olive oil
  • 2 t


Put the honey in a food processor with the olive oil, vinegar, lemon juice, chilli powder, salt and pepper. Blend to a homogenized dressing.
