Grissini are feather-light Italian breadsticks. Wrap 30 of them (one box) in Parma or Serrano ham (you’ll need about 450 g / 1 lb) and you have a quickly made canapé. Have the ham sliced on the thinnest setting, number 1. Put 2 teaspoons chilli flakes and 2 tablespoons brown sugar in a food processor and work briefly to mix. Scatter on a Swiss roll tin. Wrap a slice of ham round each breadstick in a spiral. Roll them in the chilli sugar to give them a light dusting and arrange (not touching) on a rack over a roasting tray. Bake for 10 minutes at 180°C/350°F/gas 4 and leave on a rack to cool. The bread will have softened, but leave it for 10 minutes and it will firm up again. Serve at room temperature.
