Often called tweebak, meaning twice baked, these are not to be confused with the spongy cake the French and indeed Dutch-speaking people call ‘biscuit’, or biscuits in the English sense of the word. Beschuiten are twice-baked bread buns of the rusk family. The name comes from the Latin bis (twice) and coctus (cook), which gave the Italians the word biscotto and us the word biscuit.
