Quick and easy dashi using instant mix

The best way to create delicious Japanese dishes is by using authentic dashi made from natural ingredients. However, when only small quantities of dashi are needed, or if time is limited, making dashi from scratch is not always practicable. Instant dashi is a handy solution. And taste does not necessarily need to be compromised - adding a few natural dashi ingredients to the instant mix can make all the difference, with half the effort.


    Ingredients (to make 1L of dashi)

  • 1.2 L water
  • 5 cm square kombu
  • 2 tsp instant dashi
  • 13 g dried bonito flakes


  1. Lightly wipe the kombu, then place into a pan of water on a low heat.
  2. Once the water is boiling, add the instant dashi.
  3. Add the bonito flakes and stir until the liquid comes back to the boil, then remove from the heat.
  4. Immediately strain the contents, using a cotton cloth or paper towel in a sieve.
