Yield: Makes two puddings, each serving 8
Ingredients: 150 g dark soft brown sugar; 1 tsp ground mixed spice; 200 g fresh white breadcrumbs; 200 g shredded suet; 100 g ground almonds; Grated rind and juice of 1 orange; 1 tsp grated nutmeg; 1 tsp ground cinnamon; 250 g each of raisins and sultanas; 100 g candled citron and orange peel, finely chopped; 350 g currants; 4 tbsp brandy or rum; 2 tbsp black treacle; 150 g plain flour; 2 eggs; 100 ml stout, such as Guinness

Method

Grease two 1 litre pudding basins. Gut double thick circles of baking parchment and foil large enough to cover the tops of the basins.

Mix the currants, sultanas, raisins, candied peels, orange rind, almonds, spices, sugar and suet in a large bowl. Stir in the breadcrumbs and flour.
