Cheese and fruit are both popular ways of ending a meal; here, two exotic varieties are combined. The creamy texture of the mascarpone marries well with the sweetness of the figs and both are set off by a deliciously crunchy cinnamon shortbread.

Ingredients

For the cinnamon shortbread

  • 150 g butter
  • 90 g caster sugar

Method

  1. Prepare the cinnamon shortbread. Cream the butter and caster sugar together; then add in the ground almonds and then the egg. Sift the flour and cinnamon together and incorporate them into the creamed mixture. Stir until smooth and place in the refrigerator When chilled, remove from the refrigerator and roll out the dough to a thickness of approximately 2-3 mm. Cut out 8
