  • 175 g sugar
  • 1-2 tbsp warm water or other liquid

Method

Sift the icing sugar into a bowl then add a little liquid. Do not add all the liquid in one go.

Gradually stir the liquid, whether water; fruit juice or liqueur; into the sugar using a spoon or whisk. It will seem stiff at first, but the consistency will thin rapidly and become a pouring texture.

A little lemon or lime juice can be added to the basic icing to contrast with its s
