Method

Melt and cool 75 g unsalted butter Mix the flour and salt in a bowl or on a marble slab and make a well in the middle. Pour the water and melted butter into the well, then work in the flour to make a soft dough. Work together into a smooth, slightly elastic ball. Cover and rest for 30 minutes.
