A smooth layer of rich chocolate glaze blankets a dome of pistachio cream and cherry-studded chocolate mousse, sitting on a pistachio sponge base. Once chilled, the dark chocolate glaze layer is beautifully contrasted with fine, delicate white chocolate shapes.

For the pistachio dacquoise

  • 2 egg whites
  • 20 g (1 tbsp) caster sugar

Method

  1. Prepare a circular pistachio dacquoise. Whisk the egg whites until standing in peaks, then fold in the sieved ground almonds, caster sugar and icing sugar.
