  • 600 ml milk
  • 1 vanilla pod
  • 50 g semolina

Method

Heat the milk and vanilla in a large saucepan over a low heat until almost boiling. Remove from the heat, cover and allow to infuse for 30 minutes.

Reheat the milk, then remove the vanilla pod. Bring to the boil, remove from the heat and add the semolina gradually, stirring continuously. Stir in the sugar and return to the heat. Bring to the boil, stirring continuously.
