It would be impossible to leave out chocolate chip cookies. These are wonderfully big, soft and chocolatey!

Ingredients

  • 125 g ( oz) lightly salted butter

Method

PLACE THE BUTTER, DEMERARA SUGAR AND VANILLA EXTRACT IN A MIXING BOWL, THEN BEAT TOGETHER WITH AN ELECTRIC BEATER BEFORE ADDING THE EGG. Sift the flour and bicarbonate of soda over the mixing bowl, still beating. Mix in the chocolate.

SHAPE INTO A BALL OF DOUGH AND WRAP IN PLASTIC WRAP. Let the dough rest overnight in the fridge.
