COMBINE THE FLOUR AND SUGAR IN A MIXING BOWL. Mix in the butter with an electric beater, until the mixture looks like breadcrumbs. Make a well in the centre and pour in the eggs, lightly beaten with the vanilla extract. Mix everything together well.
SHAPE THE DOUGH INTO A LOG WITH YOUR HANDS AND WRAP IT IN PLASTIC WRAP. Let the dough rest for at least 1 hour in the fridge
