FOR THE BUTTERCREAM, BEAT THE BUTTER AND ICING SUGAR WITH AN ELECTRIC BEATER IN A MIXING BOWL UNTIL THEY MAKE A FLUFFY CREAM, THEN ADD THE COCOA OR THE NATURAL VANILLA EXTRACT. If you’d like to make two icings, divide the buttercream into two portions and add the cocoa to one and the vanilla to the other.
