If you can’t find bergamot juice, just use fresh lemon juice instead.

Method

COMBINE THE CASTER SUGAR AND 150 ML (5 FL OZ) OF WATER IN A SAUCEPAN, THEN HEAT TO DISSOLVE THE SUGAR. Let the sugar syrup cool in the fridge for at least 1 hour.
