This is the combination of flavours I originally used for my take on a Splice ice cream; a simpler dessert from an earlier incarnation. Here I’ve gathered the same soft and crunchy textures and flavours together and the result tastes like a burst of tropical sunshine – a delicious tribute to the splendours of Rio de Janeiro. Close your eyes and you could be doing the samba at their renowned Mardi Gras festival or singing along to Peter Allen’s classic hit of the same name.
