Ingredients

  • 75 ml milk
  • 220 ml pouring (35%) cream
  • ¼ vanilla bea

Method

  1. Heat the milk, 60 ml of the cream and the vanilla seeds and bean in a small heavy-based saucepan over low heat for 5–6 minutes or until the mixture reaches simmering point so the flavours infuse.
  2. Using an electric mixer, whisk the egg yolks, caster sugar, cornflour an
