These make a great petit four served with chai tea. You could also serve them with coffee-flavoured ice cream or gelato, or try spreading some candied ginger ice cream between two shortbreads to make a quick ice-cream sandwich.

Ingredients

  • 50 g unsalted butter, softened
  • 25 g caster sugar
  • ¾

Method

  1. Using an electric mixer fitted with a paddle attachment, beat the butter, caster sugar, cardamom and salt until pale and creamy. With the motor running, add the cream and beat to combine – don’t overwork. Fold in the flour by hand until well combined, then shape the dough into a disk. Wrap the dough in plastic film and chill in the refrigerator for 1 hour or until firm.
