  • 35 g soft brown sugar
  • 15 g unsalted butter
  • 200

Method

  1. Place the brown sugar, butter and pineapple in a small heavy-based saucepan and cook over medium heat for 12 minutes or until the pine-apple is translucent and the liquid has reduced by half. Add the rum and cook for another 5 minutes to cook out the alcohol and reduce the liquid a little further. Cool and refrigerate until ready to serve.
