The white Persian fairy floss adorning this dessert personifies the high-camp hairstyle that conjures images of a Pompadour-style beehive that was the fashion of the French court in the time of King Louis XV. The madame in question was the king’s favourite mistress, hence the seductive charm of the ‘come to me’ flavours and allusion to the pleasures of the flesh (represented by the innocent peach), which I’ve brought together in this dessert.
