  • 20 g caster sugar
  • 2 g citrus pectin

Method

  1. Mix the caster sugar and pectin in a bowl, then add the strawberry puree and whisk to dissolve. Transfer to a small heavy-based saucepan, then cook over low heat, stirring constantly, until the mixture reaches a jam-like consistency. Set aside to cool.
