You can serve this silky, smooth cream with its voluptuous texture in a glass topped with a few slices of white peach or strawberries or scattered with crunchy praline, or use it to fill a baked sweet pastry tart shell, then cover with raspberries.

Ingredients

  • 70 ml strained lemon juice
  • 90 g caster sugar

Method

  1. Heat the lemon juice and caster sugar in a small heavy-based saucepan over medium heat to simmering point to dissolve the sugar. Add the softened gelatine and stir until dissolved, then remove from the heat. Strain through a fine-mesh sieve into a heatproof bowl and leave until completely cool but not set.
