  • 100 g unsalted butter, chopped

Method

  1. Melt the butter, caster sugar and liquid glucose in a heatproof bowl over a bain-marie, making sure the bowl doesn’t touch the simmering water, stirring to combine.
  2. Sift the flour into another heatproof bowl, then pour in the melted butter mixture and stir to thoroughly combine. Set aside to cool a little. Refrigerate the mixture in an airtight container until fir
