Ingredients

  • snow sugar, for dusting
  • 45 ml strained lemon juice
  • 5 g gelatine leaves, soft

Method

  1. Line a baking tray with baking paper and dust with the snow sugar.
  2. Heat the lemon juice in a small heavy-based saucepan over medium heat to simmering point. Add the softened gelatine and stir until dissolved. Remove from the heat.
  3. In another small heavy-based saucepan, heat the water and caster sugar over medium heat until the sugar syrup registers 126°C
