These tissue-fine wafer sheets can be served flat (without shaping around a cylinder tube mould, as described above), cut into your preferred shape after baking or left in one sheet, then broken into free-form pieces. The sheets can be used to sandwich a slice of ice cream or served with a stewed fruit compote.

Ingredients

  • 135 g fondant
  • 90 g liquid glucose
  • 12 g

Method

  1. Heat the fondant, glucose, butter and vanilla seeds in a small heavy-based saucepan over low heat, stirring to combine, until the mixture registers 135°C on a probe or sugar thermometer. Remove from the heat and stir in the almonds.
  2. Spread the fondant mixture on a silicone mat to form a 1 cm-thick layer and leave to cool and harden.
