An easy way to make the most of an abundance of over ripe figs at the end of summer, this jam has a multitude of uses. Try it as a breakfast conserve on toast or spread it onto the base of a sweet pastry tart shell, then top with lemon curd or whipped cream. I also like to spread a generous amount onto a water cracker and top it with a slice of aged Cheddar.
