  • 175 ml milk
  • 75 g caster sugar
  • 50 g

Method

  1. Heat the milk, caster sugar and trimoline in a small heavy-based saucepan over low heat to simmering point. Set aside to cool.
  2. Whisk the yoghurt and lime juice into the cooled sugar syrup until smooth, then add the elderflower concentrate and stir to mix well. Churn the yoghurt mixture in an ice-cream machine following the manufacturer’s instructions until firm. T
