This is a perennial favourite of mine during winter when pears are at their prime. The spiced pears can be served with ice cream or honey cake with a spoonful of wickedly good clotted cream alongside, or added to a winter trifle.

Ingredients

  • 750 g beurre bosc pears, cut in half and cored
  • 200 g mild honey (i use organic ligurian honey from kangaroo island)

Method

  1. Heat the pear and honey in a heavy-based saucepan until the honey reaches simmering point, then cook gently over low heat for 5 minutes or until just tender. Add the spice mix and butter and stir until just combined and the butter has melted. Remove the pan from the heat and leave the pear halves to cool completely, then cut into dice.
