  1. Using a stick blender, puree the pear, then press through a fine-mesh sieve into a heatproof bowl.
  2. Heat the milk in a small heavy-based saucepan over medium heat to simmering point. Add the softened gelatine and stir until dissolved, then remove from the heat. Add the gelatine mixture to the pear puree, then blend again until smooth. Set aside until completely coo
