You can make these a little larger and sandwich them with salted caramel or chocolate ganache for a sweet snack or petit four. They also give an added texture to a fruit trifle when layered with the cream.

Ingredients

  • 85 g organic raw almonds, lightly toasted
  • 60 g pure icing sugar

Method

  1. Preheat the oven to 120°C.
  2. Place the almonds, icing sugar and spice mix in a blender (or use a Thermomix) and blitz until finely ground; do not sift.
