  • 75 g roughly chopped unsalted pistachios
  • 75 g caster sugar

Method

  1. Place the pistachios on a silicone mat on a baking tray.
  2. Heat the caster sugar and water in a small heavy-based saucepan over low heat until the mixture reaches a medium caramel colour, swirling to combine; do not stir. Add the butter and swirl to melt, then pour over the pistachios and leave to harden and cool.
