  • 250 ml filtered water

Method

  1. Heat the water, caster sugar and glucose in a small heavy-based saucepan until the mixture registers 85°C on a probe or sugar thermometer, then leave to cool to room temperature.
  2. Fold in the lemon juice and fromage blanc until well combined and smooth. Churn the mixture in an ice-cream machine following the manufacturer’s instructions until firm.
