The idea for this dessert came from a cocktail I like that combines vodka, Aperol and fresh mandarin juice, muddled over ice. Cold weather yields a bounty of citrus fruit, which provide a perfect foil for sugar in dessert work. Mandarins are such a lovely fruit and I like to make good use of their lively fresh juice during winter.
