This pineapple concoction is so versatile: add it to a cheesecake, serve it with the coconut yoghurt sorbet on page 13 or a tropical-flavoured gelato, or make a soft pavlova roulade and mix the pineapple into the whipped cream for the filling.

Ingredients

  • 600 g fresh pineapple flesh, cut into 5 mm dice
  • 40 g soft brown sugar
  • 60 <

Method

  1. Place the pineapple, brown sugar, honey, vanilla bean, star anise and rum in a heavy-based frying pan, then cook over medium heat, stirring occasionally, for 10 minutes or until caramelised. Drain the pineapple in a fine-mesh sieve set over a bowl to reserve the syrup, then set both aside to cool completely.
