Ingredients

  • 125 g fondant
  • 20 ml water
  • 20 g

Method

  1. Heat the fondant and water in a small heavy-based saucepan over low heat for 4 minutes or until the fondant starts to melt; as the fondant melts, increase the heat to medium–high, then add the coconut. Cook for 5 minutes or until the coconut mixture caramelises. Pour onto a silicone mat on a baking tray and leave to cool completely.
