A muddle of flavours that immediately transport my tastebuds to Morocco and North Africa, I created this dessert after visiting that part of the world many times and becoming intimately familiar with its heady, perfumed flavours and exotic ingredients. It’s pretty easy to conjure up an image of lounging on a rug in a desert oasis in front of a crumbling kasbah as you devour this offering. Pass the hookah baby!
