  • 250 ml pouring (35%) cream
  • 175 ml milk

Method

  1. Heat the cream, milk, pepper, orange zest and caster sugar in a small heavy-based saucepan over low heat to simmering point. Add the orange juice and softened gelatine and stir until dissolved. Remove from the heat and strain through a fine-mesh sieve into a heatproof bowl. Leave until completely cool but not set.
